Aloo Matar (Potatos and Peas)
Potatos and peas (Aloo Matar) is one of my favorite Indian dishes. There are many diffrent way to prepare this dish. I have used information on how to prepare indian dishes from the internet and from Indian friends of mine as well. I seem to learn something new eveytime. To make this dish I start by cutting up 1 large onion, 2 jalepeno peppers, 2 teaspoons of garlic and 2 tamatos. In a stove stop pan I heat 3 teaspoons of olive oil or an oil of your choice on low heat, add cumin seeds and brown them for about 3 mins. Add onion,peppers, garlic and a pinch of salt...sautee for 5-10 mins and add tamatos . While that cooks together I dice 3 potatos. before I add my potatos I add a pinch of turmnik, spicy chili powder and Gram masa( mix of spices) Add Potatos and a half couple of water. Cook on medium heat for 10 mins then add frozen peas bring to shimmer. I always add a little ginger and cilantro toward the end of cooking time. I prefer to eat with capati (Roti) but is also good with rice. This is also very good with raw onion. tamato, and cucumber. Squeeze lemon juice over the top and add salt. This is very tasteful! I'm no pro but this is the run down of basically how I have learned to make this dish. You could also add the spices in the start of the process and roast them. What are diffrent types of Indian food?
In September of 2009 I married a man from India. I became very interested in the diffrent types of food. My husband does not eat dark meats so he just sticks to fish, chicken and turkey. I have learned to cook more of the vegitarian meals. I use alot of onions, peppers, garlic and many different spices and seeds along with other vegtables. The meals are ate with rice and roti also called Chapti. Roti is somewhat like a tortilla shell that is made fresh with every meal. I will be dicussing in futher posts different dishes and how they are made to my knowlegde.
